You might take over the helper but you cannot take over the contract. It requires a totally new contract which is not subject to anything that might (or might not) have been included in a previous contract. If she has been paid that much she might well feel she can demand that of any prospective new employer, but there will be few willing to pay that much. I think you should go lower, and unless you desperately want her she would have a choice between taking it and leaving it. And I echo the comments about live-out arrangements in general being illegal. As reported elsewhere in this forum there have been cases where Immigration approves it but such approval must be justified and not taken for granted.
