Best place on Maktan Island is Plantation Bay -
Shangri La is over rated and over priced.
Best place on Cebu island proper is Alegre (about an hours drive) with 3 private beaches and the sea area around it is a protected area.

Siem Reap, Cambodia is lovely... the temples are great if you havent been. Angkor Wat, Ta Phrom, Bantaey Sri and Bayon. But there's nothing much else... so just hit the bars, spas and eat! :) I was there last mth... lemme know if you need recommendations!
Hanoi's lovely too... walks around the lake, the sights, history, gallery, food, people.
Have fun!

If you don't mind another 3 hours from Cebu airport, Bantayan Island is a remote island which is very serene, has fabulous beaches but limited nightlife (if at all).
If interested, you may get in touch with Larda of Santa Fe beach resort. Beachfront cottages are fan-cooled and very rustic. They have aircon rooms too with hot/cold showers. Ogtong Beach Resort is managed by the same owners and has better facilities +63 918 919 9101.
You may also arrange transfers with them from the airport. Have fun!

Luang Prabang in Laos.
it is also like a time wrap!
And of course Angkor Wat/Siem Reap (+ factor: direct flights from Hong Kong, nice hotels)
