How about in Wanchai? There is a knitting shop on Johnston Road, near Landale Street.

The Wanchai one I find nice and helpful. There's one in Sheung Wan (around Bonham Strand/Hillier St junction) staffed by surly old men. Don't like than one much.

There is a stall in the lanes in Central which sells some wool, but it's pretty small. Didn't notice if they did needles etc though.
