I couldn't find any of the ready made ones last weekend when I cooked roast beef so resorted to making my own:


285ml/half pt milk

115g/4oz plain flour

3 eggs

a pinch of salt


Pop into the oven (230'c) once your beef is cooked and out of the oven resting.

Crucial thing is to pre-heat the oiled tray/tin till it's smoking hot before you put the batter in. Use beef fat, not vegetable oil, to oil the tray. That way you get a contrast in texture between the crisp outside and the softer inside.

Agree with 2006, vital to heat up the oil really well, although we use vegetable oil and they still work fine.
