transfer VHS tapes to digital format

I have a few VHS tapes (home videos made ages ago) that i would like to transfer to digital format for the purpose of re-editing them and saving their content from HK humidity.

First question, what format should i choose? DVD?

Does anybody know a reliable photo/video shop or lab that offers this service?
