I have an american client looking to take his daughter to a thanksgiving dinner since they will be without the full family for the day. Has anyone seen any hotel restaurants advertising any such dinners or any other restaurants around HK Island?

yes - Tribute on 13 Elgin st (which is excellent restaurant in the first place) have a thanksgiving dinner.
