This is called Rich Chocolate Mousse:
Serves 4
Ingredients
170g dark chocolate
4 free-range eggs, separated
Shot of liqueur, such as Cointreau or amaretto
To decorate
Whipped cream
Grated chocolate
Method
1. Place the chocolate into a heatproof bowl over a pan of simmering water and melt it, taking care not to let the chocolate overheat.
2. Meanwhile, whisk the egg whites until they form soft peaks.
3. Stir the liqueur into the beaten egg yolks and add to the melted chocolate.
4. Pour the chocolate mixture into the egg whites and gently fold together.
5. Divide evenly between four ramekins and transfer to the refrigerator to chill. Decorate with whipped cream and grated chocolate.
A basic one, serves 2-4:

200ml double cream
2 tbsp icing sugar
100g dark chocolate
Method
1. Whip the cream and sugar in a large bowl to form soft peaks.
2. Place the chocolate into a bowl, sat over a pan of simmering water and allow to melt.
3. Stir the melted chocolate into the cream, until combined.
4. Place in the fridge to chill for up to 20 minutes or longer.
