Packed lunch/snack
Posted by A me (740 days ago)
Any easy, not messy and yummy recipes for packed snack/lunch for a small eater.
Have exhausted of all ideas and I think I need to be more interesting/innovative. Plus, I am a stickler for healthy nutritious food so the choices get narrower.
Any ideas welcome and really appreciated!

Pasta salad--mix together any cooked pasta with steamed veggies like brocolli florets, asparagus, grilled peppers, portobello mushrooms...whatever you fancy. Add grilled chicken breast, or tuna, hard-boiled eggs for some protein..
Bring along a separate container of dressing and toss them all together if making it with salad greens, otherwise you can mix everything together the night before. I pack them in individual disposable containers per serving.
I also make chicken sandwiches for my husband's lunch pack using boiled, shredded chicken meat and diced cucumber dressed with natural yoghurt + a little mayonnaise, dijon mustard and capers.

Do you think it's ok to pre-cook packed lunch during weekends for the entire week (let say Mon-Thur and allow Fri for lunch with friends/colleagues)? How should I go about doing this? I don't have time after work to prepare food for the next day, but I would really love to eat healthy homecooked food.

Raincatcher,
You can prepare ingredients during the weekend and just toss them together the night before or in the morning. Would take less than 5 minutes.
Have some separate containers of grilled chicken, tuna, cooked noodles, steamed (then chilled)veggies, grated cheese, bottled olives, bottled feta cheese in the ref. If stored properly, these ingredients (pasta, cooked veg and meat) last at least 3 days.

Annebin, If I freeze the ingredients, will it affect the taste?

I send a packed healthy lunch and snacks for my husband with every morning. It could be mixed salad (undressed). I make a big salad dressing and he stores it in the office fridge and use it whenever he needs it. He also have some seasonings like chilli flakes and peppers there.
He also have with him some low fatcheese sticks in the office and he can just bite in them with some lettuce leaves when he gets hungry.
I make homemade hummus or baba gannnouj and is good to pack with vegetables or pitta bread or just plain crackers .It could be part of lunch or snack. It is very healthy too and keep well in the fridge. Low fat cottage cheese can be sprinkle with chilli flakes and some dried herbs if you have them but fresh is best of course.
