I have been to one (can't remember the name - sorry) at 1 Peking Road at TST ... it was very nice and also did vegetarian dim sum.

Kun Tak Lam in Causeway Bay offers wide selection with no MSG, and some organic vegetable dishes. Situated opposite Regal Hong Kong Hotel in Causeway Bay.
The string bean dish is lovely btw!

Loong Yuen in the Holiday inn has a fair amount of vegetarian dim-sums and are very accomadating to your requests.

1 Peking Rd (7th floor) is another branch of Kung Tak Lam. Try Light Vegetarian above Jordan station.
