What is a visum? If you are making multiple trips, then you should get an unlimited 6 months visa to China. You can also buy 1 time entry valid for 3 months, or 2 times entry valid for 3 months. THe cheapest and fastest way to get a visa is to visit the China Travel Service offices. There is one in Central Des Voeux Rd, but many offices all over HK.
I'd recommend coming to HK first and then getting a visa as it is cheaper than getting in home country.
HK to Guilin - you can buy plane tickets at any travel agency - Dragonair is cheaper than China Southern. Hotels in Guilin that I would recommend are Waterfall (best) and Sheraton. Both are centrally located along the Li River 5-10 min walk to Elephant Trunk Hill. If you are going to Guilin, you should definitely go to Yangshuo. I took the advice of people here and went there recently.
If you want to go to Macao, no China visa needed. I think you can just go with Dutch passport without visa, but do check.
Guangzhou - direct trains go there. Be sure your passport has at least 6 months remaining. If not get a new passport first before coming here.
