she can absolutely process her new visa here because the reason of her termination is financial problem, but that must be clearly stated on her release paper from the previous employer, then immigration will consider it.

I dont think she can stay here and process the visa, she will go home before immigration start to process her visa, I think they will only give her 3 more days extension, no matter how nice the release paper, if she the contract is terminated she still goes home, there are certain reasons that immigration will consider, thats when the employer died, financial problem, and leaving Hong Kong.

you should find someone with finish contract if you badly need a helper, because when she finish the contract she can wait for the visa 2-3 weeks here in Hong Kong then she can start right away.
