We pay the levy for our helper, we pay it all in advance as it is easier for us. But you can choose to pay in installments.

it's not the helper's payment. i'm not overly generous but i definitely pay the levy...

I also know that DHs used to have a minimum wage HK400 higher than now. They paid the levy themselves. Actually the were required to do so, but many didn't. They gave the reasons like: forgot, don't have money; or they just went back to Phil without final payments. That's why the government decided that they'll get the levy from the employer more surely than from a helper.

I do a food allowance.
I don't think it is fair to force the helper to eat my food - which is mostly vegetarian.
Also, I have heard of the other extreme, which is helpers eating the expensive food in the house - like the Ben and Jerry's ice cream and replacing the empty tub in the freezer.
I just think it is much 'cleaner' to keep it separate. Our helper has a drawer in the fridge, and we needn't worry about shopping for someone else's tastes or appetite.
