I know its a bit dumb to ask here, but I can't think smoothly as this moment becuase I am so upset, I want to fire my helper, I am not happy with her for a long time already, last time I talked to her she promised me she will do her best, and she asked for a second chance. But last yesterday, she went out after lunch becuase she said she wants to go and see her friend who is leaving HK, and she end up coming home 10PM last night. And today I talked to her I am not happy anymore and I want her to leave by the end of the month.And now she is just in her room packing her things.....I made it clear end of the month, what will I do with this girl? What papers I need to give her now? Notice that she have to leave by the end of the month? Do I need to send a copy to immigration too?please help me ......I can't think well....

Do I need to pay her the annual leave eventhough she is only working for us for 7 months now? So I will make some documents stating that I am terminating her?And then I will give her release letter also?
But I want her to leave end of the month, because I need her, I have to take time to find a new helper.
So I will just give her notice for this time? written there that she will leave by the end of the month.

You also need to give a copy of the termination letter to the Immigration Department within 7 days of the date of termination. Some of the info you are after will be found in Chapter 7 (and others) of the following link:

is not illegal for me to give her ticket rather than money? because she said I have to give money for her ticket, rather than ticket itself, she said she will be the one to buy her ticket. But I want to give her a ticket.

You can give her the ticket. Of course she would prefer the cash, but too bad. She can go and buy the ticket, give you a receipt and then you pay for it.

You have to buy her a ticket home and not give cash. If she is wanting cash, it means that she doesn't intend on leaving HK.
I would also make her sign a final payment letter stipulating exactly how much she has received and that she agrees this will be her final payment.
As gogis mentioned, final payment should include her one month salary, holiday pay, a return ticket home and travel money to her home town.
I know you need her to stay for the final month, but will you be able to trust her after all this?

Oh, and you can pay for her return trip the cheapest way - flight to Manila and bus the rest of the way. My old helper bought a flight all the way to her home town and then billed me for it (after she had left).
