Easter holidays are not statutory. It means that you may/may not give them to your DH. There are only 12 statutory holidays for helpers, as listed by crj.

That's right. Over Easter your helper is entitled only to her normal rest day. You always have the discretion, of course, to give her extra time off.

Huge relief... Thursday is NOT a statutory holiday!

My helper keeps mentioning how her friends have tomorrow off for holiday. As above, it is not a DH Holiday. So, if I want, I can give it to her off with pay?

If you want to give your helper a day off, that is your choice.
When we didn't have babies, we gave our maid all the holidays off.
Now I have two babies, and my husband is away M-F, so we have out helper work except the statutory holidays.
I don't think it is legal for you to pay her less, so you would just give her a free day off, which I am sure she will appreciate!
