OK, shoot me down in flames for my lack of knowledge ... but is there a place to hire LOCAL-HK domestic helpers?

Hmmmm, I checked this out and for anyone interested there is a place where you can find HK-Cantonese DHs - Methodist Centre (Counselling & Integrated Employment Services) tel: 2527-2250. Mainly part time DHs for around HK$50-60 per hour or one-off house cleaning for $70 ph. However, if looking for FULL TIME staff works out v expensive vs overseas helper. For example, FT local helper costs around $5,000 for 5 hrs per day, 6 days per week. 11 hours daily or home stay costs monthly wage of HK$9,500. Now you know ...
