We have recently decided to hire a helper whose contract with her last employer was terminated due to the family moving overseas. She is working for this family up until a week before they leave, and then she said she will move in with us.
This is fine, however she also said that her imm. interview for her new visa is about 1 week after she moves in with us which I'm guessing means she won't have the relevant visa to be legally working for us in that first week. I know she has applied for a visa extension with immigration but I don't know if that allows her to work for us until she has her interview?
I've never hired a DH before so haven't been through this process. Is this something I should be concerned about?

This is illegal and she can't move in with you until she has the visa. Although alot of people do this you really have to be careful.

Think you find most DH's move in before their visas are through.
