Hi,
We're leaving HK and I'm getting a bit confused about requirements no various sites for releasing helper. We want to ensure she can stay in HK and be re-employed without going back to philippines. She has a couple of interviews lined up, but nothing fixed yet. Can she stay in HK on current visa without new employer confirmed?
What do we formally need to provide?
Release Letter
Severance payment
Termination letter/notification to immigration?
Advice very welcome!

Technically you do not need to provide a release letter. However since its purpose is to protect you it is a good idea.
Severance payment is not required if she is released due to redundancy (as is the case here). If she has worked more than 5 years, you need to pay a "long service payment".

She can stay for 14 days.

It's the other way around. If dismissed for reasons of redundancy severance payment is not required. However long service payment is if the helper has worked more than five years.
