We just had a new DH start with us - we ourselves are new to HK.
Some newbie questions:
- when do you pay them and how often; beginning, mid or end of month or whatever we both agree
- how do you pay - cheque or cash?
- health insurance - any recommendations; i'd rather get more than less
- any other insurance we need to get?
many thaks

Monthly. You can do it on the day of employment.
"- how do you pay - cheque or cash?"
Cash is king. Cheque means they have to have a bank account in HK. It also means they have to take the time to deposit the cheque.
"- health insurance - any recommendations; i'd rather get more than less"
Zurich works for us. HSBC is ok too.
"- any other insurance we need to get?"
Health insurance is actually not mandatory in HK, but since you are responsible for medical costs you should get it. Liability insurance ("helper insurance") is mandatory.

Agree with axptguy except:
Dont agree with giving cash, there are no records. I just do a bank transfer to her account and she can access when she likes, the record is set for both of us so no disputes. You may say you both can sign a receipt but from stories i've heard so much forgery and tampering with papers, then i believe bank records are vital.
