Can only find 'specimens' on the immi depts website of the forms needed to employ helper.

Surely I'm not required to make a trip to the immi dept to get 'clean' forms to fill out??? So where do I get all the necessary forms to employ a helper?

Actually yes. You are required to go and get the green contract form in person. You can also have an agency do it for you. Or you can have the candidate do it.
