Is it possible to hire a full-time helper for 2 to 3 months?

Just to clarify, the only contract length for a foreign domestic helper is two years. Of course you could, as grytch says, hire one then terminate her. The nice thing to do would be to let her know about what will happen. However note that helpers on uncompleted contracts may have a harder time finding the next job.
The other option, as Susie1 says, is to get a local helper.

You cannot hire a helper from the Mainland.......

Either 1. The mainland helper already has an HKID or 2. They are employed illegally which has happened in the past
