I don't know if you can do that kind of check on a prospective helper, I don't think there is any facility to check at Immigration, Maybe you could ask to speak to previous employers, if she was valued by them they may have left contact details, no matter where they moved to.

If she has done something really bad I think Immigration will inform you of it. Not sure though.
There is always a slight risk. However if she seems perfect you should follow your gut feeling.

By Limited employment history, I assume that you mean she has "holes" in her employment periods in HK. She should be able to give you a list showing when she first came and who she has worked for, from when to when. If she cannot do that then it sounds a bit fishy.
Another option I suppose would be to ask to see her passport. You would then be able to see her HK visa stamps, see how long she has been here and then push her further for information on her former employers and employment history.

It seems that most responses have missed the point that it is a local resident being considered, so Immigration will not be much help. I think you can ask for a police clearance (as suggested by grytch) but I think that will cover only the legal side...you will need to consider something else re her character (trustworthiness, diligence etc etc).

Spot on kenwin. As a local why would you check here passport, hell she doesn't even need one! With limited employment there is little you can do, these girls just do a few hours here and there anyway. You can do a criminal check BUT through here only. You cannot request it yourself.
