Hi,
I presume your prospective employee is already having her papers processed at HK Imm,, this can take 4-6wks from start to finish. The only thing I can think of to do is perhaps email Imm with as many details of your prospective employee as you can, and they may reply telling you where the process is up to.
As you are not her employer yet until all the 'red tape' is finished then there is not a lot you can do to pursuade Imm to rush things or extend her visa.
I also suggest that before you sign any final papers, have a full medical done on your prospective helper, to exclude any illness or pregnancy.
She must also live with you as the employer on commencement of employment, not with her boyfriend, as you and her could get into a lot of trouble allowing her to live out.
