Paperwork for helper who has broken her contract

I've been through this before as an employer. Yes you can start doing her paperwork now. You'll need to use an agency though if she's from the Philippines (unless you're a foreign diplomat). You can even time things with the paperwork and her giving her notice to her current employer so that she only needs to go across to Macau and back (to leave the country on her current visa and return on the new one) rather than back to the Philippines during the processing. (i.e. time things so that the new visa has been processed and is ready prior to the end of the 14 days she's able to stay in HK once her current contract has ended).
