I have a few questions which are pretty basic but causing me some confusion.
Must a FDH leave HK at the end of a contract that is not being renewed? Even if s/he finds a new employer willing to sign a contract starting the day after the previous contract ends?
If the FDH does not have to leave HK between contracts, do you still have to pay for passage from the FDH's home country to HK at the start of a new contract?

The FDH must complete her contract with last employer before you can start filling in the provisional new contract forms, the processing of the forms normally takes 6-8 weeks, during which time she cannot start work or live in your home, IMM rules. Her old employer should have either given her a one way ticket and expenses to go home, and the new employer pays for her flight and door to door expenses into HK. The FDH may be able to get the papers etc from IMM, for you to fill in, if she has not done this before then try an agency to do the processing.After forms have been filled in she may as well go home, because of the wait till you can legally employ her. The new employer is liable for all charges for Visa's, contract processing, medical for the helper and insurance. Keep records and receipts in a very safe place, of all you pay out, and when she is officially your employee pay wages/ food allowance if any through the bank so there is always a record of what is payed out in case of disputes later.
Meanwhile learn as much as you can about employing an FDH, via the IMM faq websites, and books available at book stores. Good luck with it all.
