My helper will end her contract this June, we will not renew her contract for some reason, now she's asking for a release paper. Can anyone here help me, what is the release paper?, what do I need to write in the the release paper? Is it the same as Employment Certificate? . . . .Sorry this is my first time to have a helper.

I think she probably means a reference, which can be very simply written if you haven't been too happy about aspects of her work or honesty.
You just have to write -----(helpers name) has been employed by me from DATE to DATE. she is good at *** (only honest good points). Signed employer.
You have to also inform Immigration within 7 days of her leaving, give her the air ticket, plus 100 hkd per day food allowance for the trip--it may take 2 days, and transport cost to the air port and at the other end to her home address. pay up to date and get her to sign for everything.

I think she means a Release Letter. She will need that when she applies for a new contract at IMD with a new employer.
It is very simple stating that you have released her, at the end of her contract, on DATE.
As Susie says you should send a copy to Immigration as well, within 7 days of her leaving.
