We just hired our DH in October and she is asking for vacation two weeks over Christmas/New Years. Do we pay for that ticket back to her home country? And can I say no if we are planning to be away for the holidays?

Yes you can say no and to be honest i am very flexiable with my helper and try to be fair but i wouldn't grant two weeks holiday so soon after her starting especially when she is only legally entitled to one week a year (i give mine 4 weeks a year and one weekend a month off) I think you would be better off having her show her worth first unless you really don't need her or she may think you are a soft touch.
If you do give her the holiday time then you don't need to pay for tickets home or even the holiday time over one week for the year again it is your call what you wish to do on that.

hi - we give ours 4 wks a year as well, but we try to make sure that it is actually during the time we are away on holidays as well - when we dont need them. I find it easiest for us and keeps the helpers happy. so you might consider letting her go if you are not there anyway and dont really need her? Get one of her friends, or a helper of your friends to come every now and then to check on the flat, otherwise, what will your helper do really for the time you are away?
Of course you have every right to say no - she only has been with you, what, a couple of weeks?
