We are new to Hk and just wanted to clarify a few things re helpers. I have two helpers and I was wondering if it is a must to give them all statutory holidays off. I read somewhere that one can negotiate with them at the beginning on how many holidays they will get off. Please advise..

They get 1 day off a week surely its not much to ask to give them PH's, statutory or not. I'm sure you'd be able to manage one day without them.
