My helper will finish her contract with me on 25 February. We will not sign another contract. She is entitled to 2 weeks annual leave. How do we settle it? Should I release her on 11 February and still pay full salary or let her stay till 25 February and on the 25th pay her half-month salary?

Your helper needs to be paid up to the last day she works for you, also she is due 2 weeks holiday pay. Plus you need to provide her with a one way air ticket to her home country,door to door expenses, ie bus to airport, bus from airport at her home country end, with 100 hkd per day travelling expenses, as sometimes the journey is more than one day.
Document and get her to sign for ANY money given, if you give her money instead of air ticket, document this with an independent witness present if pos.
