I am now in the process of getting all the paperwork done to renew my helper's contract. I just realised that I failed to inform immg. that we changed address. Am I in serious trouble?

I don't have this experience of this particular case but given previous experience with HK bureaucracy I would say you are not in serious trouble. I would inform them in writing ASAP.

I was going to mail in the paperwork to renew my helper's contract tomorrow. Should I put a letter in with the mail? I'm so afraid that well get into trouble. It was an honest mistake on my part.

What would be the best way of going about this? Should I just mail in the new applications and hope they don't notice?

If you have time, why don't you go to Immigration in person with your application and letter? You'll have to go early though or stand in line for ages. I think you may also be able to make an appointment over the phone to save time.

Go there and explain what happened. These things probably happen all the time.

There's a form for that! I'd download and submit ID407G (Revised Schedule of Accommodation) and submit before (preferable) or with the renewal. Axptguy38's on the money though if you have the time.
