Contract rate vs. actual payment

Most people I know put the figure that they want to pay on the contract. The only reason you would put a low figure on the contract but then pay more is if you keep your helper for a long time and then have to pay long service pay which would be calculated on the contract figure.

If you put a higher figure than the statutory minimum then you contractually must pay this amount each month, regardless of performance. I would recommend putting in the minimum in the contract and then pay any additional amounts as and when you wish, and you will not be bound to it. I think if you are concerned about trial periods I would pay the statutory minimum for a trial period and then increase the salary incrementally, if you are pleased with the helper's performance. I think a trial period is a good idea, even just to monitor performance and to allow you both to discuss expectations etc.

A lot of helpers have separate sections in the fridge for their own grocercies, i have heard of this. I think you need to structure it how best you think it will work for your household.

I put the minimum on the contract, and pay a bit more.

Contract 3,400 salary + 300 food allowance = total 3,700. But I pay 4,000 after the first month if the first month goes well.

This way if there is ever a problem and I need to pay a last month/termination fee it will only be 3700. Same regarding the long service pay.

Regarding food allowance, we give the bottom drawer in the fridge and a shelf in the freezer to the helper to use.

If you have agreed to pay your helper a set amount each month then that is her salary and what needs to be on her contract. If you have not and want to pay more than min wage then you can choose to do what the others have said and put min wage on her contract but pay her extra when you are happy to do so.
