I have had to terminate my helper's contract (less than 12months) as I am relocating and leaving Hong Kong. I have sat down with her and worked out and agreed final payments aside from airfare - I wanted to buy her a plane ticket but she wants the cash.
Can I do this as long as I get her to sign something as proof that I paid the money with the intention of it to be used as a plane ticket?

Yes you can do this. I would print off a 'sample' of an airfare back to the Phillipines/Indonesia and then give her a photocopy of this and have her sign for the amount. That way you have a copy of a fair flight cost for your own records.
ALso as you are effectively a financial termination - as you are leaving the country, she will be treated like an end of contract helper, so won't have to leave the country if she finds an employer, so she technically doesn't need this ticket home (so would prefer to pocket the money).
