Do you have any advice on whether it is better to hire a single or married DH? I have concerns about (a) DH getting pregnant or (b) going around "partying" in Wanchai and places like that, as I have young baby to take care of. In your experience, which category (single vs married) would be a higher "risk" for these concerns and would it also depend on the nationality, i.e. Philippines vs Indonesia.

Nationality doesn't mean squat. There are good and bad, and same goes for married and single.
Age would be a more defining factor, as would experience. People on here have complained about their married DH's that have boyfriends or they believe might be earning money on the side, and the same complaints for singles.
Stereotyping based on very loose criteria is not the best way to go about things. With a young baby I would personally go for someone in their 30's who may have had kids, or love babies, and when interviewing see how they are with the baby. Do they wash their hands before they hold the baby? Do they look comfortable?
We've just gone through this process after loosing our local help and also have a young baby and eventually we did find someone who has turned out to be very good.

What about an older single helper? Our helper is 46, not interested in the Wanchai nightlife scene, and doesn't have kids or a husband back home to worry about. Although she hasn't any kids of her own, she has worked in HK for many years and has previous experience with young children. My children are now grown up, but I'd definitely look for someone with this criteria if I was in your position.
