Is it possible to only get part-time help? So not someone living with us 24/7? For example 1 day out of the week for cleaning and some babysitting? Or is it a case of all or nothing in HK when it comes to helpers?

Part time helpers need to be residents with the right to work. So a PR or a dependant visa holder - they do not necessarily have to be local Chinese but that is what most of them are.
An FDH (foreign domestic helper) is here on a specific type of visa and this is a full time live in contract.
PRC residents cannot work here as maids, only those who have been granted HK residency.

Watch out for some mentally unstable part time helpers applying. I posted an ad and one helper answered and I called her turns out her timing isnt right. So I thought that was that. Then I got a strange call from another Indonesian helper whom I did not give my number to, saying she heard I am looking for part time, and she is available 3 weeks during xmas. I told her I would consider and maybe set up a sunday for interview. She's been calling me every couple of days to push for interview. Then I just sms her today saying I got helper for xmas already, but I need someone for January, which didnt fit her schedule. Just now, I received an SMS from her CURSING ME OUT, saying I was toying with her and she regret calling me. CRAZY WOMAN, watch out. Her name is ANNA, or Annita, not sure, and she is Indonesian.
