1). My D/h's previous employer was paying her salary through cash as she does not have a bank account. What proof do I have about salary has been paid incase I use cash [ is this the usual mode in HK ? ]

2). Should i keep copies of the passport/id card OR the original documents [ 've heard of some DHs pledginf their passports for cash loans - the liability was on the employer]

1)Every month ask her to sign a receipt. It worked well with my DH.

2)It is illegal to keep her documents. However, some of my friends do this because of the reason given by you. I never do this because it is not my (employer's) liability if she takes loans and can’t repay.

The gov website has a PDF on employig a DH and one of the last pages is a 'Salary Receipt' which you can use. Or you can create your own in Word/Excel.
