I usually do 2 cups of water to 1 cup of rice and leave it to steam in the rice-cooker after the cooking time's over to really dry it out so the grains are separate, but the last brand/type of Basmati I bought needs a little less liquid.

thanks thames,

the problem is the one i bought doesn't have instructions and a quick search on the web showed that the water to rice ratio varies!

guess it's a matter of trial and error!

I had a look at the Basmati packet in my cupboard, which indicated the following ratio:

1 cup rice to 2 cups boiling water if cooking by conventional method( heavy bottom pot on stove)

1 cup to 1.5 cups boiling water for electric rice pot. Rice soaked for 20-30 mins

But, I had been cooking using microwave oven, using 1 : 1.75 hot water, with chicken, olive oil thrown in & rice soaked for 20 mins first. Previously, I had tried 1:2 ratio which is a bit moist.

My Bangalore colleague informed me that the amount of water to be used, depends on the age of the rice & to soak rice for 20-30 mins.

hi all,

thanks for the tips!

i have a feeling 1 cup to 1.5 cup water works best for our cooker. this is because last night, i did 1 cup rice to 1.45 cup water (since the web advice was either 1.5 or 2, decided to try something in between) and it was slightly mushy.

can anyone explain why we need to soak basmati rice before cooking but not the usual rice?

Soaking the rice is a matter of preference, as some recipes do not call this out. Maybe, it's a Best Known Method.

I learnt to cook the microwave method in Bangalore, so I did ask about "soaking", given explaination was that it will help to soften the grain, reduce breakage & speed up the cooking time etc. No scientific explaination on this.

Also, take note, if soaked, reduce the required amount of water for cooking.

I even carried home a pot belly-shaped Indian pot which is used by the Indian restaurants to serve Basmati rice. Initial planned in cooking conventional with this pot, but yet to try this out.

This website offers several basmati rice cooking methods and also an explaination on "soaking".

I think other long grain rice eg. Thai Jasmine type has also the option to soak the grains. Somehow, steamed rice seems more fragrant, when I had it in Thailand. The rice was steamed in small bowls over a big wok of water.
