I need help in making mayonnaise, anyone out there who does this regularly?

Hello,

this is very easy and very yummy, here is how to do for a small amount of mayonnaise:

- put 1 egg yolk in a bowl

- add salt and one drop of white vinegar or lemon juice

- stir a bit

- add a small spoon of dijon mustard

- stir a bit

- then pour very slowly neutral oil (sunflower) while stirring quickly making circles in the same direction with a small whisk

- the mayonnaise should get thicker and thicker

that's it

If it starts to split put a drop of boiling hot water in it while whisking.
