Anyone have a good chicken recipe? simple is best.

seal a couple of chicken breasts in a hot pan, throw in some onions and then add a 1/2 stock 1/2 white wine mixture so about half the chicken breasts are exposed, poach the chicken for about 10 minutes then throw in a Boursin roulade and let it melt into the juices.

chicken fillet, slice it thinly
flour+pinch of salt+black pepper
2eggs
bread crumbs
1 onion,3 garlic
2 medium tomato (chop smaller size )
pinneaple cubes (optional)
1 tsp starch and 1/2 cup water ( 125ml )
5 tbsp tomato ketchup
4 tbsp white vinegar or 3lemon juice
1 tbsp sugar
1 tsp salt
garnish : spring onion/ cilantro leaves
Method:
1.dip chicken in flour then egg then bread crumbs till fully coated.
2.Fry chicken in hot oil till golden brown,drain the oil.
3.Stir fry onion then garlic in small amount of oil ( use olive oil for healthy reason or use normal vegetable oil if you like )
4. Add fry chicken fillet, tomato,pinneable cubes
5. Mix and stir tomato ketchup, little bit water (not hot),1tsp starch,1tsp salt,sugar(1tbsp),3-4tbsp vinegar/2 lemon juice in a bowl , pour on the chicken.
6.stir for awhile till sauce thickened and serve.
Note :
1. Bread crumbs makes your fry food crispier
2. Taste your food while you're cooking, everyone has different taste, some like sour/sweet some don't so adjust the ingredients.
3.Don't use local ketchup,i like to use Heinz

Best roast chicken recipe ever (Stephanie Alexanders)
you need: 1 size 15 chicken
1 lemon
olive oil
fresh rosemary
salt and pepper
1 walnut-sized piece of butter
1 clove garlic
What you do:
- preheat oven to 220 celsius
- rub chicken vigourlously all over with halved lemon
- season with salt and pepper, then brush with oil
- squash the garlic, rub it in S&P, then stick up its bum with the rosemary and the butter
Stick it in the oven for 1 hour. For the first 20 minutes it sits on one side, for the next 20 the other, then the last 20 on its back, breast side up. Baste it whenever you tuen it, though the juice only rally starts coming out in the last 20 minutes.
- wrap it in foil for 10 minutes. Then take the roasting pan and deglaze/reduce with one glass of white wine, for the gravy.
- I serve this with roast pumpkin and boiled peas. You can season the pumpkin with oil, S&P in a bowl, then season/oil the bird by using it to wipe out the bowl (the bird's final indignity).
It's easy, largely foolproof and delicious (though chickens in Asia, even the imports, I find pretty tasteless). I found a recipe for drunken chicken and so am giving it a go next week.

try this:
4 chicken breasts
6 spoons olive oil
6 sage leaves
salt and pepper as you like
200 ml cooking cream
directions:
cook in the olive oil the chiken with the sage until it's cook ,usually takes 15 minutes but with low fire.
when the chiken is cook add the cooking cream and wait until it's reduced.
it't yummy!!

i just made for dinner , very simple chicken soup.. tasty ,healthy and simple...
1/2 pcs old chicken..( chinese called it lao mu ji )
1500ml water
2 tbsp salt
1 clove garlic
mix all in pressure cooker...cook it for 1/2 hour with middle fire....
garnish with spring onion...
very delicious.. but must use old chicken.. i used other chickens but the fragance cannot beat old chicken... old chicken has leaner and tough meat..

wash the chicken and marinate it with salt, red chilli powder and lemon juice. keep it for an hour. Then heat olive oil in a pan, when the oil is hot put the chicken and the on top add yogurt. The yogurt should be good enough to cover all the chicken peices. Just stir the yogurt before adding to make it smooth. Cover with a lid and after about 5 mins turn the chicken pieces. Cook till chicken is tender. The yogurt will make the sauce. You can cook further if you need a thick sauce or switch off the gas once the chicken is tender. You can choose the consistency of the sauce.

Buy a whole chicken, wash it and dry it. add 2 purple onions roughly chopped into a big enough baking dish/tray, also add leek and carrots to the dish (you may change the vegetables however you want to) , season with lots of olive oil, S/P. Put into the oven to start cooking. then marinate the chicken with cumin powder, salt and pepper, chicken stock cube and olive oil, then get a whole lemon, stab it all over and put it in the microwave for 10 seconds as it will make all the flavours from the peel come out even more. Then stuff the chicken with the lemon as a whole with rosemary. put it in the oven on top of the vegetables and all the juices will make the bird succulent and tender. Once cooked all the juice from the veg and bird put into a saucepan and season with any extra s/p needed, add some corn flower to thicken and drizzle the lemon over the veg and bird.
