can you share your mother's fishcake? i made fishcake ala myself :) recipes :

600gr mackarel fish paste

2500gr cassava/tapioca flour

100ml water

1tbsp salt

2tsp sugar

spring onion (chopped finely )

1tbsp fish sauce ( thai fish sauce )

blend all in food processor till fine

shape to a small ball then press flat, put in boiling water till float.

fry

i bought them frozen..go find in wet market.. i usually defrost or leave it in room temperature for awhile..then debone..it's easy to debone mackerel since their bones big and few.

tapioca flour make the form spongy and chewy.. , you can add shallots,chives like ur recipe. i can't get shallot in my city so i skip it .


mashed potato only will make it soft not chewy

err.. i guess you can use all kind of fish with strong flavour.. the fishy smell make the taste wonderful.
