Cake without eggs?

I have a recipe for eggless banana cake,have made this so many times and always comes out to be wonderful.posting the recipe , hope this help:

Ingredients:


Self raising flour: ¾ cup


Banana -1


Fresh milk-1/4 cup


Sugar-1/4 cup


Baking Soda-1/4 teaspoon


Vanilla Essence- 1/4 teaspoon


Procedure:


1. Clean the baking dish and rub some oil inside the dish and the sprinkle some flour. Keep the dish aside.


2. Preheat the oven for 5 minutes at 150 degree


3. In a bowl mix the self raising flour and baking soda and keep it aside


4. In the other bowl, cut banana into small pieces and mash the pieces. Add oil and oil to the mashed banana.


5. To the banana –milk mixture, add the mixture of self raising flour and soda.


6. Mix the two mixtures well.


7. .Then add sugar, vanilla essence and chopped walnuts.


8. .Mix all the ingredients well for sometime till it is smooth.


9. Pour the mixture in the baking dish


10. In the pre heated oven bake the cake on 200 degree for 30-35 minutes.


11. Check with the help of a knife or a toothpick , if the cake is ready.


12. Take the cake from the oven and let it call for sometimes


13. After it is cool, eat the cake and enjoy.

Just reading a magazine this weeek and they feature an egg and dairy free birthday cake.

Not sure if you can get a margarine substitute where you live, this was an aussie mag. Perhaps post a seperate message in practical for your city or check the big health food stores. If you send me a note on the control panel message system I am happy to post you the page and also another dairy,egg free recepie for date loaf that was in another magazine I bought last week.


1/4 cup waer

2 tablespoons vegetable oil

2 teaspoons of baking powder

3 cups of plain flour

1 3/4 cups of caster sugar

1/2 teaspoon vanilla extract

1/2 cup nuttelex polyunsaturated table margarine

extra 1 1/4 cups water

extra 2 1/2 teaspoons baking powder

hundreds and thousands to decorate

Creamy Vanilla Frosting

1 1/2 cups Nuttelex margarine

4 cups icing sugar

2 tabelspoons hot water

1 tablespoon vanilla extract


Grease two deep 20cm round cake pans, line bases with baking paper.

2. Beat water, oil and baking powder in a large bowl with an electic mixer on low speed, for about 30 seconds or until combined. Add remaining ingredients, beat mixture on low speed fr 1 minute or until just combined.

Increase speed to medium, beat for about 3 minutes or until mixture is smooth and thick. Divide mixture evenly among prepared pans.

3. Cook in a moderate over 180 C for about 35 minutes or until cooked when tested. Stand cake pans for 5 minutes then turn out onto wire racks.


Creamy Vanilla frosting

Beat margarine in a small bowl with an electric mixer until light and fluffy. Gradually add icing sugar, beating until combined. Beat n water and vanilla extract until just combined.

Sadwich cakes together with one the third of the Frosting. Spread the remaining frosting over top and sides of cake and decortate with hundreds and thousand.


I guess you could do chocolate frosting by adding some coco powder or other colourings flavourings.
