Does anyone know where I might be able to buy standard letter-size (8.5" x 11" or 216mm x 279mm) white paper? This is the standard paper size used in Canada/U.S. Is it available anywhere in HK?

Standard and letter size are different. If you go to Gough street /Western, as you walk to towards the west you will see a shop that sells papers/card and envelopes - they have all kinds of papers and will cut to any size you want and in small quantities. I don't know their name but I use them a lot.

Just check to see if they are still in the same place - I have not been down there for a while.
You choose your paper at this shop and then they will direct/take you to the cutters one street down to get it cut to size - charge $30 or something to cut it.
To get to Gough Street, you walk along Wellington Street towards Western, then take a left at Aberdeen Rd - walk up the hill and I think Gough is the second on the right. Please check street map though before following what could be dodgy directions based on memory and autopilot.

Just an update about this place- it's still in business and they will cut paper to your specifications. I was in a pinch for US-sized paper for some documents that will go to the US. Not completely impressed with the customer service, but they got the job done.
