I've been and still searching for the same thing as well and so far have had no luck either.

I did a course a few years back with a woman called Betty. The course was organised by the YWCA in MacDonnell Road. Betty has been lecturing in HK for years and is very good. I am sure the YWCA can update you on her whereabouts (she probably still does courses there anyways).

What was the course like at the YWCA, did they teach you all about the different types of herbs and what illness they cured etc or was it very basic?
