There is a new Chinese place in the Peak Tower called Tien Yi it looks nice, but haven't eaten there yet.

Nice weather for eating outside at the moment so you could also book a table on the patio of the Peak Cafe which is the heritage building across the road from the galleria/tower... I hear that there is also a new restuarant called Pearl open in the tower and it is sister restaurant to one of the top Melbourne restaruants - not sure if it has had it's grand opening or not yet and bound to be quite pricey.
There is also a large Thai restaurant on the lower level of the Galleria which has some outdoor tables but the adjoin the pedestrian access area/fountain and large TV screen they have put on the outside of the tower so may not be very intimate during busy tourist times.

Cafe Deco - good casual dining with extensive menu - asian and western choices. 2nd floor has better views.
Agree with crj - the Sunday brunch is nice. They also have activities for kids often on the weekend - if you don't have kids ask to be seated away from this area as it can be a little noisy (it is usually on the lower floor - quieter on the second floor).
