I'm beginning to plan a birthday part for my soon-to-be-4 daughter, but since her b-day is in mid-December, most of the clubs and places are already fully booked. Any good suggestions on party venues, like baby gyms or others?

why not just go to the beach...it doesn't cost anything for the location....just prepare some picnic type meals and you have plenty of space to play games. of course you'll need lots of adult supervision there!!since 4-yr-olds tend to go for the water themselves!

The nice thing about the beach is that many of them have BBQ's pits, so the "catering" could be quite simple and yummy. Our helper is a champ on the grill.
Pizza Express will do "make you own pizza" birthday parties. Would a four year old enjoy that yet, or is that better for a child a bit older?

I used to have a business in HK - short chefs. wE taught young kids how to cook. Our youngest class group was 3 years old. Believe me, if it is not too huge of a group, they will love it. Their pizzas will look like nothing that you would want to eat, but they'll have a ball!

The coolest b'day party that my 2&1/2 years old boy invited to was one on the lawn of the Hollywood Hotel of the HK Disneyland (not the park itself: no admission fees, you just walk in), it's just absolutely gorgeous when the weather is good. Basically the lawn (not the swimming pool part)is open to public for free (no need to book either). The host brought some balls and toys and let the kids run around and adults have good chit-chat for an afternoon. It was Saturday pm and we had the whole lawn to ourselves.
The host brought a birthday cake and asked the staffs at the fast food shop there to store it in their fridge. We (around 30 guests including kids, parents and helpers) went inside to the fast food shop to cut the cake and occupied 2 big tables. The host just purchased few drinks and some snacks for the guests (of course it's more expensive than shops outside) and used the cutlery and plates for free. The kids even went to take photos with the cartoon characters and played with the toys in the souvenir shop all for free.
I got my free parking as the guard let me in and told me quietly that I should park my car at the far end of the hotel parking so that I was not in anyone's way.
It's an amazing party that we all enjoyed and it cost the host family next to nothing!!!

You could try out the Little Gym Hong Kong. They have got centres at Shatin and Tsimshatsui. Had organized my 8 yr old's b'day party out there. Superb arrangements and the kids simply loved it. Check out their webpage www.thelittlegym.com.hk
