Try spinach, otherwise prawn or white fish is good.

Saute shrimp or white fish, set aside.

Fry thinly sliced white onion and ginger.

Add one cup of washed rice, about five cups of water and alternate between boiling and simmering, adjust the water accdg to needs.

Season with nampla and some white ground pepper.

When almost done, add the shrimp/white fish or parboiled thinly sliced spinach, sprinkle with spring onion before serving.

A side dish of zasai adds perk to the congee.

remember that my grandma used to put pork bones in the congee while cooking.

for my baby when i do make congee, i use fresh fish (usually threadfin) and some spinach. the fishmonger will fillet the fish nicely for me and i add to the chunk of bone into the slow cooker to cook with the congee to make it more tasty and remove it later on.

Seafood congee -

Cook washed rice with water in rice cooker.

Cut a slit into the prawns to remove veins (keep the shells on) and stir fry in 1/2 Tablespoon of oil & a pinch of salt until pink in color.

Slice fish meat into thin slivers.

When congee is ready, take off the stove and in the fish meat, prawns in oil, salt/seasoning.

Optional :- Garnish with a bit of spring onion, thin slivers of young ginger and a drop of sesame oil
