Do you mean how to stir fry vegetables with less oil?


First, use a non-stick wok or pan.


Second, use a healthier oil (I use olive oil, even though it is not the 'traditional oil' used in Asian recipes)


Third, use a small amount of oil only.

Simple Snow Peas Stir-fry


INGREDIENTS:

8 - 10 ounces snow peas

1 tablespoon or less of olive oil

1 tablespoon finely chopped garlic (more or less to your liking)

1 - 2 tablespoons soy sauce or alternatively a bit of sesame oil


PREPARATION:

Rinse the snow peas and trim the ends.

Heat the oil in a preheated wok or skillet on medium-high heat.

When the oil is hot, add the finely chopped garlic.

Stir-fry briefly until it is aromatic, then add the snow peas.

Stir-fry briefly, then add the soy sauce or sesame oil (whichever taste you prefer).


Stir-fry for another minute and serve.

(Total stir-frying time for snow peas is about 2 minutes.)


You can pretty much do the same with most green vegetables, some just need to be cooked a bit longer.


Broccoli and Garlic is really easy - but I suggest putting the broccoli in the microwave with some water for about 1 1/2 minutes before stir frying, so it is a bit cooked already. Broccoli will take a few minutes longer to stir fry than the snow peas.

You can also try gai-lan, choi sum and lots of other green vegetables, they are all pretty similar, the only thing that varies is the cooking time. And be aware that green leafy vegetables like spinach 'shrink' when you cook them - so you start with a big handful, but when you cook it it is less than half!

instead of frying, I often just steam gailan and choisum.


And then after steaming, pour over the top nice sesame oil (good quality, good flavor, a little goes a long way) and then oyster sauce. YUM!

You can also use the oil that comes in spray bottles so you can spray and use oil that way you use very little oil. Also if you always steam all your veggies in a steamer the you can use less oil. You can just use the oil for tempering the veggies once they are steamed. For example if you are making mixed veg. then chop them to the size you want and steam them . once steamed, take very little oil, once its hot, add aesfotida, cummin seeds, grated ginger and/or grated garlic, green chillies. once this sputters add your steamed veggies. add salt, turmeric, coriander powder, red chilli powder. Mix well. If you like you can add a little ready tomato puree to this or add some lemon juice. for a slightly different taste you can add kasturi methi to this. And its ready. Ofcourse this is the Indian style of making your vegetables though.
