How long is a person allowed to stay after resigning/terminated from employment? The assumption is that the next job is not in Hong Kong.

I believe this would depend on whether your old place of employment has cancelled your visa immediately. Usually HR departments maintain people's visa's so they can be transferred to the next employer. If your visa is cancelled then I would have thought you would need to leave Hk (ie. go to macau or shenzhen) and enter as a tourist. The timing on teh tourist visa will depend on where you are from. If your visa is cancelled and on the odd chance the police request your ID on the street (highly unlikely) then you might be in trouble without re-actvating a new entry visa. I would call immigration and ask so you get the correct answer.
