A direct question for anyone out there, I am in negotiation at the moment and have absolutely no idea about HK......quite exciting though!
Salary:
If I earn AUD200k in Sydney what would be considered an equitable packag in HK?
Housing
How much rent would I pay, say I am prepared to commute 20 minutes? As I have a young family what area would you recommend? What areas could you recommend? As I have furniture that will be shipped can I expect a discount on a non furnished place?
How much for a maid per month?
Is there any other costs I should factor in?

To move your family here and assuming this is a career move in the upward direction, I would want a salary that is 20% or 30% or more than your current salary. Taxes are lower, but schooling is expensive and so is housing. I would say on average families pay HK$30-50,000 per month but ofcourse some pay more, some pay less. Popular areas for families include the South Side (Repulse Bay, Stanley, Tai Tam etc), Discovery Bay, The Peak.
You wont get a discount for a non-furnished place since most expats staying here for a year or more rent non-furnished places.
I'm not sure what maids are paid (since I don't have one!) but I think the salary is between HK$3-4000 per month.

If you have a family, you will pay a minimum of 65-75k a month for something that suits your needs coming from Sydney and it will not be nearly as comfortable. Have a good look a around with an agent. Will your package include housing?

And none of the places mentioned are within 20 minutes of Central. That's going to be a problem if you want a house within a reasonable budget. And this might not be relevant to you depending on whether you are a one- or two-car family and whether you intend to own/drive here...many choose not to but with families it can be an essential element if you're not living close to things...but the public transport here is just about the best in the world. A little crowded at times but otherwise pretty good.
