Try different agents, also flights sometimes come up at last minute.
We used to say to our agent "what is available within a 4/5 hour flight time" and base it on that...
Cebu, Hainan, Vietnam, Kota Kinabalu, etc...
Since you are flexible on your departure dates, you should be able to find something.

Try the Pearl Farm Beach Resort in Davao, so beautiful and they dont overflow the resort with people. Besides the people in Davao is so kind and they dont mind if you dont or forget to give tips. We booked it online because the hotel is very exclusive and no Travel Agency. Have you seen their website, The Samal House is so beautiful and you can see the sunset and the sunrise directly and below your bungalow is the corals and fishes. The people is so nice and warm, I miss them very much....... I will try to paste some pictures that you cant see in their website.

Yes, the whole family was there last Christmas. Bali/Phuket has beautiful resorts but still in danger of possible rebel attack and tsunami. We'll never know. I went also to Korea during Winter and we nearly crashed because of the snow.
But its so hard not to see God's creation in these islands.

Be very careful going to Davao, big problems with the abu sayif there...
Maybe go somewhere in northern versayas like peurto princesa/galera or maybe cebu...all of these have great beaches...

peurto Princessa, I think you mean Puerto Princessa in Palawan, Abu Sayaff kidnapped 8 hostage there and 2 killed in one of the Resorts. In Pearl Farm they managed to kill only 1 Resort worker because Pearl FArm have their own Military. In Palawan, you have to be careful of Malaria, I went there too. Yes, go to Cebu, it sounds alot more safer. Or Try Bohol....

Puerto Galera, nearer to Manila.
Accomodation is below par, rustic but worth going for snorkeling.
Or Anilao, Batangas if you like snorkeling and diving, 'twas fantastic.
We had a nice lunch of seafood, grilled tuna and some kind of soup with giant chunks of beef and vegs in it.
That was some lunch, cost us fourUS each some years ago.

If you like to dive/snorkel you can try Tioman Island. It's Malaysian, but you fly out of Singapore and you can almost always get a seat from HK to Singapore. There's also Bintan.
Krabi in Thailand (transit Bangkok)
We enjoyed Bohol (transit Cebu or Manila) but you'll have a tough time getting tickets to a Catholic country over Easter!
