I thought I'd share with you these 2 easy to make recipes which I found in 'Prevention' magazine. I love chocolate cakes and cookies but always feel so guilty. I'll feel better eating these ...
1. Chocolate bliss bites
Incredibly rich flavor ... but with absolutely zero fat. I've just baked them ... hmmm ...
1/2 cup unsweetened cocoa powder
Pinch of salt
3 large egg whites
1/2 cup sugar, divided
1/8 tsp cream of tartar
1 tsp vanilla extract
1 tbs confectioner's sugar
- Preheat oven to 300 degrees F. Line 2 baking sheets with foil.
- Sift together cocoa, salt and 1/4 cup of the sugar. In another bowl, beat egg whites and cream of tartar until soft peaks form. Beat in remaining 1/4 cup sugar, 1/2 tbs at a time, until meringue is glossy and stiff peaks form. Fold in cocoa mixture and vanilla extract.
- Drop by rounded tsp about 1" apart onto prepared baking sheets. Bake 25 minutes for soft chewy cookies or 40 minutes for crisp ones. Dust cooled cookies with confectioner's sugar. Makes 24
Note: per cookie - 25 cal, 1 g pro, 6 g carb, 0 g fat, 0 g sat fat, 0 mg chol
2. Enlightened brownies
They are exceptionally fluffy thanks to the addition of whipped egg whites. The flavor is all chocolate.
Ingredients:
1/2 cup cake flour
1/2 cup unsweetened cocoa powder
1/4 tsp baking powder
1/4 tsp salt
1 large egg
2 large egg whites
3/4 cup sugar
1/2 cup vegetable oil
1 1/2 tsp vanilla extract
2 tbs chopped pistachios or walnuts
- Preheat oven to 350 degrees F. Coat 8" x 8" baking pan with cooking spray
- Sift together flour, cocoa, baking powder and salt. In another bowl, whisk egg and egg whites until frothy. Whisk in sugar, oil and vanilla extract until smooth.
- Gradually fold in flour mixture until just blended. Pour into prepared pan. Sprinkle with pistachios.
- Bake 20 to 25 minutes. Cool in pan on rack and then cut into 12 squares.
Note: per brownie - 170 cal, 2 g pro, 18 g carb, 11 g fat, 1.5 g sat fat, 18 mg chol

It's definitely much healthier, and looks South Beach Diet friendly too if you replace the white flour with whole wheat flour and reduce the sugar even more.
