I would like to hear some of your experiences with cooking and storing baby foods ie
when do you prepare the baby food?
how much do you cook each time?
how do you store your baby food?
How long can baby food be kept in the fridge?
Any other valuable advice would be appreciated! THANKS!

We prepared 2-3 batches of puree a week, made them in ice cube trays with lids in the freezer (6 trays), then stored them in zip lock freezer bags. They can last 3 months.
Be sure to label the bags well - with the name of food and the date.
Now after one year old, we still cook three batches of food a week for the freezer, but toddler finger food, not puree.

My intention is not to take over this thread with advertising but you might be interested in knowing that I am teaching a course on healthy cooking for infants at the YWCA (English members department) in June. It covers topics such as when to start solids, how to puree and freeze, some ideas on finger foods and when to start and which foods to introduce during each month of the first year. I will demonstrate some recipes for 4-6months, 7-9 months, 10-12 months and 13-18 months using fresh fruits, vegetables and cereals. I want the course to give some knowledge and confidence to mothers on using fresh ingredients and their benefits.
I am a mother of two and a passionate cook and believe that good dietary habits start from when solids are started.

I mainly used Annabel Karmel's recipies for my son plus a few of my own recipies that I made up or are variations of what we eat e.g. if I was making lasagna or shepherds pie I would make sure it was all made with healthy ingrediants and then freeze some for my son. I used to cook for him every 6 weeks after blitzing the meals one a day for a week. With regards to freezing them, I bought ice cube trays from IKEA, the huge ones of 2 oz size.I am not sure if they still sell them. Maybe use those muffin trays that are made out of silicone? I also bought a load of small plastic containers with lids at HK$3 each from Welcome. These hold about 3 or 4oz each and I still use them today (baby is 18 months old). I usually triple or quadruple recipies and make 15-20 portions of each meal. I then freeze them and put the ice cubes in individual bags and put them in a large ziplock bag labelled. I do the same with the plastic pots.
My son's frozen batch currently includes:
Lasagna
Shephards Pie
Pasta sauce (with 5 veggies blended into it)
Pasta - tortellini (frozen in bags of 6)
Veggies in cheese sauce
Frozen cod and salmon
Frozen carrot puree for his salmon in orange juice and carrot with cheddar cheese recipe (yum)
Butternut squash and pasta
Ministrone
Frozen apple, pear and mango purees
Beef casserole
Lentils with b'nut squash,red pepper and carrot
Fresh - he has fruit, dried fruit, pasta and tuna, noodles and tofu/ veggies or we give him whatever we are having that say.

P.s. Braun handheld blender is an absolute godsend when making baby food. I usually keep baby food in the fridge for up to 3 days.

I went to city super to check out these ziplocks, none says for freezer use, i asked the staff and i look like an alien asking for ziplock for freezer ;-)

There are only certain fruits that go brown when you freeze them, such as banana and avacado. Not sure what else. And it's just the colour or texture that gets impaired - I don't think they actually go bad. In fact I have heard that frozen banana slices are a good teething remedy.

I've found freezer bags from 360....motherhood has taught me a lot of things like yam is different from sweet potato; there is a ziplock freezer bag apart from ordinary ziplock ;-)

Puree the mango and freeze it in cubes. I wouldn't freeze kiwi, Just cut it in half and spoon it out with a teaspoon for baby. Annabel Karmel;s recipes including Papaya and Banana always say they are unsuitable for freezing.

Cook the food by using as little water as possible in order to maintain the nutrients. Steaming is better than boiling.
Cool the hot food within 2 hours before storing in a freezer. It can usually be used within 1 week.
Divide the pureed food into the ice cube holder so that each time only small portion of food is thawed before use.
Do not rethaw the food.
